This curry recipe is super easy to make, takes less than 1 hour in preparation and cooking time, can be made ahead of time, and can be adjusted to suit your individual taste.
Lunch was our final event in Banff. Wild Bill's Legendary Saloon served us a tasty elk burger and a boar burger with side salad. Wild Bill is a real life Banff hero from the 1800's and 1900's. His last name, Peyto, is given to nearby Peyto Lake.
curried lamb shanks in a balsamic shallot sauce was also tasty and tender ($19.95). The sauce gave it a slightly sweet taste but the shallots were not overwhelmed.
As we finished our drinks, another vehicle picked us up for a surprise honoring our 30th anniversary, and we took off into the long grass. 45 minutes later, we saw a group of lights as we approached a clearing ringed by hurricane lamps. Two giant bonfires burned in the center, and a smiling group of Klein's staff stood next to a candlelit table for two. We were served a bountiful feast of soup, salad, lamb curry and champagne. Chocolate mousse ended the meal on a sweet note, and as it was served, a group of Masai performers entered the clearing, stepping and harmonizing with skill and enthusiasm. Our chef couldn't resist joining in. The magic of the evening enveloped us in a warm glow, carrying us through the rest of the extraordinary night.
An easy way to prepare leg of lamb is rubbing with herbs. Use a 5-7 pound leg of lamb. Combine tablespoon dried parsley flakes, a teaspoon dried mint, a half teaspoon each of onion salt and crushed dried rosemary, a quarter teaspoon or pepper and 2 cloves of slivered garlic. There's a thin layer on the outer surface of the meat to remove and trim the fat from it. Combine the herbs and rub over the meat thoroughly. Place in a roasting pan and cook at 325F oven for 2-3 hours for medium (160F on a meat thermometer, or to 170F for well done. Let the leg of lamb rest for 15 minutes before carving.
On the way to the town of Golden, our next destination, we stopped to hike to Johnston Canyon, a worthwhile trek! The falls were splendid! The journey curried lamb took us less than an hour. It was a little crowded, even with the rain, but by the time we reached the falls, there were very few people around. On the road again, we encountered four majestically antlered elk! They know they are VIPs, and don't allow us people to hurry them along. They promenade along the road and graze gracefully by the roadside.
These (Turkish) Mediterranean delights are more vegetable and grain based. Where as my favored Greek dishes have authentic lamb curry and cheese. I was intrigued and in a hurry so I decided to get a carry out of the spinach pie and the falafel dinner.
